Hyatt To Open New Restaurant in Schaumburg




“Fresh 1800” part of $32 million renovation at Hyatt Regency Woodfield

The Hyatt Regency Woodfield announced today the new name and format for its highly-anticipated new on-property restaurant. “Fresh 1800,” a play on the Hyatt’s address at 1800 Golf Road in Schaumburg, will be part of a nationwide trend in using the freshest ingredients, local produce and close-to-the farm foods where possible, and a cooking style and dining room environment that represents a simpler and healthier lifestyle.

“Fresh 1800” and its accompanying bar are part of a $32 million renovation of the Hyatt Regency Woodfield that is scheduled for completion in December of 2008. As part of the renovation, next spring the Hyatt will add an outdoor herb garden where, in season, fresh herbs will be picked for use by the “Fresh 1800” culinary staff and for table-top use. The food at “Fresh 1800” will be mid-priced, French-inspired and the restaurant will be open for breakfast, lunch and dinner by December 15, 2008.

“Fresh 1800 will exemplify the brand new Hyatt Regency Woodfield experience,” said hotel General Manager James Gould. “The restaurant will bring together the best food and the finest ingredients in an environment that will be perfect for travelers and local professionals eager for a distinctive and memorable meal.” The hotel will also test restaurant amenities designed for business meetings including expanded table space, enhanced Wi-fi, table-side recharging stations and semi-private spaces.

Executive Chef at “Fresh 1800” will be Hagop Hagopian. Prior to joining the staff at the Hyatt, Hagopian was the Executive Chef at Karma at the Crowne Plaza in Mundelein, IL, a “Top Ten Restaurants of 2005” according to the The Daily Herald and the Executive Chef at the Deerpath Inn in Lake Forest, IL. His culinary skills have been featured in newspapers such as the Chicago Sun-Times, and magazines such as Bon Appetit. Hagopian has also appeared on cooking segments on CSNBC, CLTV, WGN and ABC.

On the strength of Hagopian’s cuisine, the Hyatt Regency Woodfield was recently selected as the 2009 location for the annual dinner of the Les Amis d’Escoffier Society of Chicago, the influential gastronomic society.
